Local flavours

At the foot of our 4,000-metre peaks, autumn unveils its gastronomic delights, combining ancestral traditions and seasonal flavours. In this unspoilt Alpine landscape, hunting offers gourmets a whole range of tender game meats, with red deer, roe deer and chamois all adding delicious flavours to the tables in our restaurants.

Brisolée is a local speciality meant for sharing with friends and family and celebrating the fruits of autumn: this cold platter comprises delicious roasted chestnuts accompanied by dried meat, fresh grapes and various cheeses. These gustatory pleasures pair perfectly with regional wines, which add a touch of elegance to every mouthful.

Autumn is also the perfect time to enjoy Alpine cheese. Raclette du Valais AOP “Anniviers” is produced in the dairy from October to June. It is an authentic raclette cheese made from raw milk and following a special recipe passed down for generations.
