Masterclass – The Secret of the Stag

A rare masterclass with Albert Salamin, in which hunting is explored as a form of knowledge, a memory and an art of reading the terrain.

A masterclass that opens a door seldom crossed: that of a deep, patient and respectful relationship between man, the stag and the mountains. Through his experience as a hunter and his collector’s eye, Albert Salamin shares what the forest teaches those who know how to observe it: the rhythms of the herd, the health of the animals, reading the woods, the ethics of culling, and the place of game in the Alpine culinary heritage.

A baker and pastry chef from Anniviers, Albert Salamin is also a leading figure in Valais hunting. The son and brother of hunters, he has been cataloguing deer antlers found in the mountains for decades — over a thousand to date — and identifies each animal by its antlers even before collecting them. He notably contributed to the exhibition held in Vissoie to mark the 100th anniversary of the Diana d’Anniviers, which enabled more than five thousand visitors to immerse themselves in the world of hunting in Valais. At Epicurialpes, he comes to share a knowledge that is built in silence, step by step, in the forests of Anniviers.
